HOLIDAY WINE AND BEER TASTING
FRIDAY,  NOVEMBER 15th from 6:30-8:30.
Cost $15 per person. This event is limited to 100 people. Please RSVP by calling 526-3112 by November 12th.

HOW TO COOK YOUR HOLMEN LOCKER TURKEY:

Make sure to remove the giblets before putting your turkey in the oven.  The giblets can be saved for gravy or stuffing.  Next, rinse the bird inside and out and pat dry with paper towels.
If you are stuffing the bird, stuff it loosely, allowing about ½ to ¾ cup stuffing per pound of turkey.

  • Brush the skin with melted butter or      oil. Tie drumsticks together with string (for stuffed birds only).
  • Insert a meat thermometer into the      thickest part of the thigh. The thermometer should point towards the body,      and should not touch the bone.
  • Place the bird on a rack in a      roasting pan, and into a preheated 350 degree F (175 degrees C) oven.
  • Suggested cooking times:
Weight of Bird Roasting Time (Unstuffed) Roasting Time (Stuffed)
10 to 18 pounds 3 to   3-1/2 hours 3-3/4 to 4-1/2 hours
18 to 22 pounds 3-1/2   to 4 hours 4-1/2 to 5 hours
22 to 24 pounds 4 to   4-1/2 hours 5 to 5-1/2 hours
24 to 29 pounds 4-1/2   to 5 hours 5-1/2 to 6-1/4 hours
  • Bake until the skin is a light golden color, and then cover loosely with a foil tent. During the last 45 minutes of baking, remove the foil tent to brown the skin. Basting is not necessary, but helps promote even browning.
  • The turkey is done when the internal temperature reaches 165 degrees F (75 degrees C) at the thigh.
  • Enjoy!

Adults can celebrate with  Day of the  Dead Pale Ale brewed by Cerveceria Mexicana in Mexico.  This Ale is amber color with medium body, pleasant floral aroma with a distinctive bitterness and great character…the bottles are pretty cool too!

RECIPE:

o        Slow-Cooker Brat and Sauerkraut Soup

(Thank you Nancy V. for sharing!)

PREP: 30 minutes SLOW COOK: 6 hours

1 pound fresh Holmen Locker brats, cut into 1/2 inch slices
1 pound tiny new red potatoes, quartered
2 small onions, chopped
1 cup sliced celery
2 cloves garlic, minced
3 bay leaves
1 14.5 ounce can Bavarian-style sauerkraut
2 14.5 cans low sodium beef broth
1 Tablespoon spicy brown mustard
1 Tablespoon cider vinegar
1 teaspoon paprika
1 teaspoon fennel seeds, crushed
1/2 teaspoon caraway seeds

1. Cook brat slices 3-4 minutes, until browned.
2. Combine potatoes, onions, celery, garlic and bay leaves in a 4 to 5 quart slow cooker. Top with browned brats and sauerkraut. Whisk remaining ingredients and pour into cooker.
3. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours. Discard bay leaves. If desire, top each serving with sour cream.

Happy National Hot Dog and Ice Cream Month!

RECIPE IDEA: Celebrate National Hot Dog month with hot dogs from the Holmen Locker & Meat Market!  Think outside the bun… how many different recipes do you use hot dogs in?  Share your favorite recipe on our Facebook page!  Here’s an easy one to try:

Hot Dog and Bacon Roll Ups:

Ingredients:

  • 2 (12 ounce) packages hot dogs, cut in half
  • Brown sugar
  • 1 lb bacon, cut into in the middle
Directions:

    1. Take a piece of hot dog and piece of bacon, wrap bacon around hot dog.
    2. Stick a toothpick through bacon to hold.
    3. Place one layer in bottom of Crock Pot and cover with brown sugar.
    4. Repeat until all hot dogs have been used.
    5. Cook 3 to 4 hours.

Some of you may have heard about the beef recalls lately.  Just a reminder, we are a State Inspected facility where a FSIS inspector visits every day to check our processes for quality, consistency and bacterial content. In La Crosse County, there are only 2 state inspected meat retail plants and we are one of them. We want you to stay healthy and shop local!  This is just another reason to visit Holmen Locker!

HOW TO CUT A WHOLE LOIN – 1.  Make sure you have a sharp knife!  Preferably a butcher knife with a thicker blade.  2.  Freeze your loin for about 30 minutes, just so it firms slightly.  Do not totally freeze or you will not be able to cut it!  3.  Square off the ends.  Rib eye ends can be used for Prime Rib.  Steaks will be cut from the middle.  4.  Wrap in a freezer bags or Cryovak machine.  Make sure as much air as possible is out of the bag for a better seal.

Happy Easter!

HAPPY EASTER!!  We’re getting that much closer to warmer weather, beautiful Spring flowers and of course grilling out!!

Some of you may have heard about the beef recalls lately.  Just a reminder, we are a State Inspected facility where a FSIS inspector visits every day to check our processes for quality, consistency and bacterial content. In La Crosse County, there are only 2 state inspected meat retail plants and we are one of them. We want you to stay healthy and shop local!  This is just another reason to visit Holmen Locker!

EASTER WINE/BEER PAIRING -  You have your Easter Meal planned but what beverage would compliment your meal? Do you like the combination of salty and sweet?  Pair your meal with a bottle of Moscato.  Our Banana Bread Beer would go perfectly with Easter brunch.  (Yes, it really does taste like banana bread!)  Speaking of beer-We have 10 NEW BEERS in stock! 

HOW TO COOK YOUR EASTER HAM – You may be getting tired of getting this from us every year but we have over 30o people who ask for it!  (SO….you know it’s good!!)  Double Smoked Ham is a holiday favorite. Here are easy cooking instructions: put the ham in a roaster; pour a can of 7-UP over the ham; cover the ham; then bake 10 minutes per pound of ham at 325-degrees. This ham is a fully cooked product, so all you need to do is heat it thoroughly. During the last 15 minutes of baking time, put honey, orange marmalade and brown sugar on top of the ham and let it melt in to the ham.
