We finally hit the 60 degree mark!  How many of you have broken out your grills?

Easter:  Order your Double Smoked Ham at 526-3112.  How to cook your Holmen Locker Double Smoked Ham:  This is the easiest recipe we have found!  Put your ham in a baking dish.  Poor a can of 7-Up or Sprite over the top and cover with tinfoil.  Cook your ham at 325 degrees 10 minutes per pound.  So, if you have a 5 pound ham, cook it at 325 for 50 minutes.

WINE PAIRING:  Sagelands Riesling from Washington pairs perfectly with our Double Smoked Ham!

WING SAUCE:  Some of you have asked about our wing sauce.  We have tried Sweet Honey Orange and Sweet Molasses.  The Sweet Honey Orange was good and not really orangy.  The Sweet Molasses was excellent on wings!

NEW PRODUCTS: Insomnia is a white wine blend from California. This unusual blend’s alluring kaleidoscope of bright flavors dance on the palate … lingering well into the back palate. Enjoy with food. Enjoy alone.

Wiedemann’s Special Lager A refreshing Bohemian-style lager, brewed with a proprietary blend of malted barley and aromatic hops.  Check out their website for food pairings.

We have two new beers from the Pecatonica Beer Company, located in Wisconsin: Nightfall Lager has a flavorful balance that starts with dark chocolate, a caramel center and finishes with coffee notes. Alphorn Ale is equally balanced malt to hop flavor will make you want to yodel.

Drafty Window Farmhouse Ale from the Hopothesis Beer Company.  With a focus on locally grown ingredients from the Midwest, this golden ale is complex, spicy and quaffable.

Have you tried Demon Pig BBQ Sauce?  We have 7 flavors to choose from:  Mandarin Teriyaki, Smokin’ Maple Bacon & Ale, Canadian Maple Dijon, Lemon Peppery Garlic, Smokey Habenero Chipotle, Kentucky Bourbon and Sizzlin’ Chile.  Let us know your favorite!

MEAT PRICES:  You have probably noticed meat prizes are on the rise.  We try to keep our prices as low as possible but have margins we have to meet.  As soon as the market price goes down, so will our prices.  We’re hoping to see relief soon.

Happy St. Patrick’s Day!

It might be hard to believe but nicer weather is getting closer!  I can’t wait to start grilling again!  We’ve broken out the broiling pan for our steaks and pork chops!  For a little tropical flavor, try our Hawaiian beers made with real Kona Coffee or our fruit flavored Moscato’s in peach, mango, strawberry or raspberry.

March Meat Special: Tendercut Steaks only $8.29/lb.   Tendercut Steaks are taken from the front shoulder, off the chuck and is called terres major.  It is the 6th most tender steak on a beef.  In our opinion, it’s not as tender as a tenderloin steak but it has as much flavor as a tenderloin.  It is great marinated or just seasoned.    Have us marinate it for you!

Speaking of marinades, which one is your favorite?  We carry Excalibur Marinades in Sundried Tomato, Lemon Garlic, Authentic Steak House, Mandarin Teriyaki, Pa’s Black Bull BBQ and Fajita.  We will have new flavors this Spring.

Happy Valentine’s Day

RECIPE:  Sweet & Spicy Bacon Chicken

Ingredients:

Holmen Locker Chicken Breast Strips and Bacon

Garlic Powder
Chili Powder
Bacon
Brown Sugar

Directions: Season chicken w/salt, pepper, garlic powder & chili powder.  Wrap in bacon and roll in brown sugar. Bake at 400 until crispy, about 30-40 min.  Enjoy!!

Happy New Year!!

Can you believe the New Year is almost here?  Thank you for your patronage during 2013!  We hope you all have a wonderful 2014!

January Meat Special: Stock up on 50 pounds of Ground Beef! 85% Lean is $3.59/ pound, 90% Lean is $3.79/pound. Call 526-3112 to order your bundle!

WINE PAIRING:  The Ned Pinot Noir pairs perfectly with any kind of beef.

RECIPE: Would you like a new twist on chili?  Try using The Works Bloody Mary Mix instead of plain tomato juice.

Hamburger Soup:

1 lb.  Holmen Locker Ground Beef

1/2 cup chopped onion 1 12 oz. can of tomato juice (Why not try The Works Bloody Mary Mix?)

7 cups beef broth 3 cups frozen mixed vegetables 2 sliced carrots 2 potatoes, peeled and diced 1/4 tsp. celery salt salt and pepper, to taste

Brown hamburger with onion in a large pot. When the meat is browned, drain off all excess fat and discard.

Add the remaining ingredients and simmer for 30 minutes.

HOLIDAY WINE AND BEER TASTING
FRIDAY,  NOVEMBER 15th from 6:30-8:30.
Cost $15 per person. This event is limited to 100 people. Please RSVP by calling 526-3112 by November 12th.

HOW TO COOK YOUR HOLMEN LOCKER TURKEY:

Make sure to remove the giblets before putting your turkey in the oven.  The giblets can be saved for gravy or stuffing.  Next, rinse the bird inside and out and pat dry with paper towels.
If you are stuffing the bird, stuff it loosely, allowing about ½ to ¾ cup stuffing per pound of turkey.

  • Brush the skin with melted butter or      oil. Tie drumsticks together with string (for stuffed birds only).
  • Insert a meat thermometer into the      thickest part of the thigh. The thermometer should point towards the body,      and should not touch the bone.
  • Place the bird on a rack in a      roasting pan, and into a preheated 350 degree F (175 degrees C) oven.
  • Suggested cooking times:
Weight of Bird Roasting Time (Unstuffed) Roasting Time (Stuffed)
10 to 18 pounds 3 to   3-1/2 hours 3-3/4 to 4-1/2 hours
18 to 22 pounds 3-1/2   to 4 hours 4-1/2 to 5 hours
22 to 24 pounds 4 to   4-1/2 hours 5 to 5-1/2 hours
24 to 29 pounds 4-1/2   to 5 hours 5-1/2 to 6-1/4 hours
  • Bake until the skin is a light golden color, and then cover loosely with a foil tent. During the last 45 minutes of baking, remove the foil tent to brown the skin. Basting is not necessary, but helps promote even browning.
  • The turkey is done when the internal temperature reaches 165 degrees F (75 degrees C) at the thigh.
  • Enjoy!

Happy October!

Can you believe Fall is already here and Halloween is quickly approaching?

RECIPE:

o        Slow-Cooker Brat and Sauerkraut Soup

(Thank you Nancy V. for sharing!)

PREP: 30 minutes SLOW COOK: 6 hours

1 pound fresh Holmen Locker brats, cut into 1/2 inch slices
1 pound tiny new red potatoes, quartered
2 small onions, chopped
1 cup sliced celery
2 cloves garlic, minced
3 bay leaves
1 14.5 ounce can Bavarian-style sauerkraut
2 14.5 cans low sodium beef broth
1 Tablespoon spicy brown mustard
1 Tablespoon cider vinegar
1 teaspoon paprika
1 teaspoon fennel seeds, crushed
1/2 teaspoon caraway seeds

1. Cook brat slices 3-4 minutes, until browned.
2. Combine potatoes, onions, celery, garlic and bay leaves in a 4 to 5 quart slow cooker. Top with browned brats and sauerkraut. Whisk remaining ingredients and pour into cooker.
3. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours. Discard bay leaves. If desire, top each serving with sour cream.

Happy National Hot Dog and Ice Cream Month!

RECIPE IDEA: Celebrate National Hot Dog month with hot dogs from the Holmen Locker & Meat Market!  Think outside the bun… how many different recipes do you use hot dogs in?  Share your favorite recipe on our Facebook page!  Here’s an easy one to try:

Hot Dog and Bacon Roll Ups:

Ingredients:

  • 2 (12 ounce) packages hot dogs, cut in half
  • Brown sugar
  • 1 lb bacon, cut into in the middle
Directions:

    1. Take a piece of hot dog and piece of bacon, wrap bacon around hot dog.
    2. Stick a toothpick through bacon to hold.
    3. Place one layer in bottom of Crock Pot and cover with brown sugar.
    4. Repeat until all hot dogs have been used.
    5. Cook 3 to 4 hours.

The Nordic Creamery is located in Westby, WI.  A few of the flavors we carry are; Cinnamon Sugar Butter, Garlic and Basil Butter and Maple Syrup Butter.  We have also added Jimmy’s Salad Dressings.  Those of you who came to the Girls Night Out event in June were able to sample them.
