NEW PRODUCT: Shake Chocolate Porter: Our twist on the traditional robust American Porter, Shake Chocolate Porter is dark black in color with rich, sweet aromatics and flavors of dark chocolate, coffee and caramel. This unique brew blends five different grains, including Chocolate Wheat, that along with cacao nibs create a devilishly delicious chocolate finish with a velvety mouthfeel.

Happy March!

Freezing tip:  Freeze the loins for about 20 minutes.  Remove from freezer and cut to desired thickness. Put in freezer for later use or grill with your favorite seasonings.  Not sure of what seasonings to use?  Ask us!  We’re glad to help!  Enjoy!

RECIPE CONTEST

Since September is our Ground Beef Sale, submit your favorite recipes using Ground Beef to our Facebook page by September 30th for a chance to win 5 pounds of 85% Lean Ground Beef!  There are no limits to the number of entries BUT we are looking for casseroles, meatloaf or soup recipes.  (You know…good Fall comfort food!)

Thank you to everyone who entered our August recipe contest!  Lisa Wolters was our winner with this recipe for Potato Soup
1 garlic clove, minced
1 sm. sweet onion chopped (optional)
1 tbsp olive oil
2 qt. fresh “green” beans, snapped in to 2″ pieces (pole, bush, green, purple, dragon, rattlesnake beans etc. or any combo of fresh “green” beans)
5 med. red potatoes, scrubbed and cut in to 2″ cubes
1 lb. bacon ends, cut in to 1″ pieces
Water
2 cups chicken stock (optional, may use only water)
2-3 cups milk or half and half cream
Black pepper to taste
Salt to taste

Saute garlic and onions in olive oil in a lg. dutch oven or stock pot. Add bacon ends and saute slightly. Remove from heat. When slightly cooled (enough to prevent bacon grease from splattering when adding water) add potatoes and just enough water to cover. Simmer potatoes for (about 8mn). Add green beans with just enough water or chicken stock to cover. Simmer until potatoes and beans are softened. Add milk or half and half and simmer just until heated through. ( I tend to add more milk to the recipe. If I have half and half or cream I add less). The bacon ends (and chicken stock if added) lend salt to the taste so be sure to only add salt if necessary. Best served hot with a bit of fresh ground black pepper on each bowl and a crusty sourdough bread for dipping in to the soup. Versions of this recipe have been a late summer staple in our family for many generations.

July Specials and Events!

HOLMEN LOCKER “JERKY”: Have you tried our “Jerky” yet?   Our “Jerky” is cured, smoked and made in small batches on premise in our smokehouse.  We have six flavors: Spicy, Mild, Sweet & Hot, Teriyaki, Tex-Mex and Pepper.  We also have Spicy Chicken and Honey Pork.  Ask to join our Jerky Club and earn FREE Jerky!  How does it work?  You receive a stamp for each $25 purchase of Jerky.  Get ten stamps and receive a free pound!

We had our first ever Jerky Tasting last month.  Our cured & smoked beef won.  The “Spicy” came in first with the “Sweet & Hot” coming in as second for overall favorite.  The Sweet & Hot definitely has a kick to it so make sure to keep a glass of water close by!  Better yet, pair it with one of the craft beers available at the Holmen Locker!  Did you miss it our Jerky Tasting?  Like us on Facebook to keep up to date on our events and specials!

NEW PRODUCTS: 
  • Tin Roof Market Jams and Jellies:  Tin Roof Market, LLC is located in River Falls, WI.  Their mission is to make unique delicious jams and jellies as natural as possible by using fresh ingredients, including natural or organic fruits and berries.  Our favorite so far is the Strawberry Key Lime Jam.  Let us know what you think!

DOUBLE SMOKED HAM:

Easter is March 27th this year.  Please call (608) 526-3112 to order your Double Smoked Ham.

Double Smoked Ham Recipe:
Here are easy cooking instructions: put the ham in a roaster; pour a can of 7-UP over the ham; cover the ham; then bake 10 minutes per pound of ham at 325-degrees. This ham is a fully cooked product, so all you need to do is heat it thoroughly. During the last 15 minutes of baking time, put honey, orange marmalade and brown sugar on top of the ham and let it melt in to the ham.
WINE PAIRING:
 You have your Double Smoked Ham but which wine should go with it?  Try Nine Vines Moscato!  Nine Vines Moscato is crisp and fresh; bursting with grapey flavors.  This is a light, delightfully sweet, slightly fizzy wine.
