RECIPE:

o        Slow-Cooker Brat and Sauerkraut Soup

PREP: 30 minutes SLOW COOK: 6 hours

1 pound fresh Holmen Locker brats, cut into 1/2 inch slices
1 pound tiny new red potatoes, quartered
2 small onions, chopped
1 cup sliced celery
2 cloves garlic, minced
3 bay leaves
1 14.5 ounce can Bavarian-style sauerkraut
2 14.5 cans low sodium beef broth
1 Tablespoon spicy brown mustard
1 Tablespoon cider vinegar
1 teaspoon paprika
1 teaspoon fennel seeds, crushed
1/2 teaspoon caraway seeds

1. Cook brat slices 3-4 minutes, until browned.
2. Combine potatoes, onions, celery, garlic and bay leaves in a 4 to 5 quart slow cooker. Top with browned brats and sauerkraut. Whisk remaining ingredients and pour into cooker.
3. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours. Discard bay leaves. If desire, top each serving with sour cream.
