Some of you may have heard about the beef recalls lately.  Just a reminder, we are a State Inspected facility where a FSIS inspector visits every day to check our processes for quality, consistency and bacterial content. In La Crosse County, there are only 2 state inspected meat retail plants and we are one of them. We want you to stay healthy and shop local!  This is just another reason to visit Holmen Locker!

HOW TO CUT A WHOLE LOIN – 1.  Make sure you have a sharp knife!  Preferably a butcher knife with a thicker blade.  2.  Freeze your loin for about 30 minutes, just so it firms slightly.  Do not totally freeze or you will not be able to cut it!  3.  Square off the ends.  Rib eye ends can be used for Prime Rib.  Steaks will be cut from the middle.  4.  Wrap in a freezer bags or Cryovak machine.  Make sure as much air as possible is out of the bag for a better seal.
